MANILA -- From its humble beginnings as an airport hotel, Hyatt Hotels Corporation has grown to become a worldwide hospitality giant with a slew of concepts catering to a variety of markets.

One of these concepts is the Grand Hyatt, which recently opened its first hotel in the country in Taguig.

“Grand Hyatts are very dynamic hotels. In general, Grand Hyatts are events-driven hotels. We call them MICE hotels, [specializing in] meeting, incentives, conventions, events,” explained Gottfried Bogensperger, area vice president and general manager of the Grand Hyatt Manila.

Designed with this market in mind, the Grand Hyatt Manila has facilities that go beyond the usual, including a 1,190-square meter ballroom (the only one in Asia with a full show kitchen), and the Garden Pavilion, an outdoor events place with a lawn, to name a few.

This mindset also extends to their room design like the Grand Double, which has two double beds (one converts into a daybed), and two separate bathing areas with sinks, besides the usual room amenities (high speed internet, a flat screen TV, in-room safe, turndown service, and walk-in closet).

It’s a setup that works whether guests will be sharing a room for a convention, or if you’re a family on vacation (or a staycation).

Another unique selling point to its rooms? All of its 461 guest rooms enjoy an enviable view of Makati or Manila, since the hotel takes up the top 25 floors of the highest building in the metro.

“The plan is that you can stay here for a week, and guests can eat at a new restaurant every day,” added Bogensperger.

In terms of food and beverage, there are seven planned outletts, with only two remaining that are set to open soon.

These are the No. 8 China House andThe Peak. The former will serve Cantonese and regional Chinese dishes, including Peking duck made in a custom-made oven, created by artisans that were flown in from China. The Peak, meanwhile, will take over the top two floors of the hotel and will be an entertainment hub with a music bar, whisky bar, and a speakeasy.

“Grand Hyatt is very grand in its making, and very bold in its appeal,” Bogensperger said of the design of Grand Hyatt Manila.

Must-try desserts are the Berry Cheesecake with fresh berries (that ranks with the best of them in the metro), and the Almond Florentine Cake, as specialty of the pastry chef with layers of chocolate mouse and caramelized almonds. While cuisines from Chinese and Filipino to Continental are readily available, it’s all about the experience here at the Grand Kitchen, as diners can get their dishes cooked or prepared ala minute, and to their specifications.

This includes burgers cooked to your chosen doneness with your choice of fix-ins; picking your pasta and sauce in the Italian section; having freshly made sushi or sashimi; or creating your salad with your chosen greens, dressing and toppings. The Grand Kitchen’s Roast and Hainanese Chicken

One of the highlights of any Grand Kitchen meal though should be this station. Ask for roast chicken with crisp skin and juicy meat, or be seduced by the clean flavors of their Hainanese chicken. We recommend getting a half-order of both in the first pass. Photo by Jeeves de Veyra

Warm Chocolate Fondant from the Grand Kitchen

The Grand Kitchen’s dessert station has soft-serve ice cream to make your own parfaits, cakes aplenty featuring chocolate to fruit, a live crepe-station, and an overload of fresh fruits. A definite standout in this station is the Warm Chocolate Fondant. Worth the wait, this chocolate cake that has edges barely holding in a molten chocolate center, is a treat to eat, especially with a serving of vanilla soft-serve ice cream. Photo by Jeeves de Veyra
