BF Homes eats: Kapeng Mainit marks one year with new dishes

MANILA -- Bryan Francisco of Kapeng Mainit in BF Homes Paranaque made a splash last year in the culinary scene with his food trip-worthy beignets.

A year later, Francisco is set to move to a new and bigger location. With this move comes the addition of new dishes in his menu.

Here are our top picks:

1. Sinigang Fried Chicken

The chicken is marinated with sinigang spices, battered and fried, served with a properly sour tamarind gravy over garlic rice.

2. Forbidden Rice Champorado

Using forbidden rice (black rice), it is not only healthier, but the rice adds a pleasant nutty taste to the chocolate porridge. A great play on spicy and sweet, as well with a topping of Korean-style spicy caramelized dulong.

3. Chocolate Beignets

These are a bit heavier than the original version, and come dusted in powdered sugar or stuffed with a filling, as well. I prefer to eat mine stuffed with salted caramel.

4. Cheese Stuffed Beignets

These savory beignets are shaped like balls with a filling of mozzarella and cheddar cheese. It’s an exercise of patience to wait for them cool down a bit, as the filling is hot and piping and can burn your tongue. Your patience will be rewarded though—as you bite into a light crust to get pillowy pastry and melty cheese goodness.

5. Buttermilk Biscuits

Francisco hits a home-run with these biscuits. While the crust is lighter than usual, the biscuit itself is a stunning success of pastry skill with each buttery, melt-in-your-mouth bite.

Served with maple syrup, try them with Francisco’s homemade French-style jams like strawberry and mango, these are probably the best or surely one of the best biscuits in Metro Manila.
