CEBU -- In Room for Dessert, a new café concept by Cebu's famed Casa Verde group, dessert is the star.

Located in the Sky Park of the newly built SM Seaside City, the restaurant, with its glass room design, boasts of a beautiful view of Cebu and its mountains -- a spectacular place to view the sunset while sipping on coffee, or a smoothie.

Good coffee is essential to a cafe and Room for Dessert carries carefully curated, locally and ethically sourced beans. Ethically sourced means the farmers in Benguet and Kalinga get paid fairly for their produce, so sipping a cup here means you’re helping them out.

Arabica beans with a bit of Liberico are used to make Americano or latte, iced or hot. Or perhaps try one of its blended drinks like the bestselling Double Chocolate Chip, starting at P105, which tastes as good as its more expensive counterparts from other coffee shops, and is a perfect way to beat this summer heat.

If coffee isn’t your thing, why not try fruits? Room for Dessert’s smoothies are made from fresh frozen fruits and soft-serve ice cream—rich, not too sweet, and very refreshing. Must-try variants are the strawberry banana, and since we’re in Cebu, the mango.

While the café also serves light sandwiches for those looking for a quick snack, the café as its name suggests prides itself in its desserts like freshly baked cakes. While it has popular flavors like the Red Velvet Cake, or the Rainbow Cake, Patricia Noel from Room for Dessert urged us to try the Cookie Dough Cheesecake, and we weren’t disappointed.

Chocolate chip cookies make up the crust of this cheesecake, while the base itself was rich and dense, with just the right amount of sweetness -- think New York Cheesecake but with cookies mixed in. Cookie monster would definitely approve.

But the item that makes customers’ eyes light up? Premium soft-serve ice cream surrounded with "fairy floss," the kid-friendly term for cotton candy. When this dessert is served to you whether it be in a cone or a cup, your eyes will light up like a little kid’s. Mine surely did!

While Room for Dessert has a twirl-all-you-can for only P30, the soft serve ice cream specials uses a more premium version of its ice cream — vanilla ice cream churned to perfection – rich, but still light, and lusciously creamy. Starting at P59 (cone), you can enjoy this premium ice cream with cotton candy and different toppings.

Feeling like eating some gummy bears? Try Mason’s Beer Belly with Gummy Bears. Want a proven classic? There’s Julianna’s Cookie Madness with chocolate Oreo and chocolate chip cookies. Or perhaps take a break with Ting’s Heavenly Chocolate with Kit Kat pieces and candy covered chocolate.

Want to try something interesting? The K-Pop C’s has caramel popcorn, and Pop Rocks. It’s a unique experience to have the cotton candy melt on your tongue, followed by the coldness of the ice cream, the sweetness and crunch of the popcorn, while Pop Rocks fizzle all throughout the process.

Room for Dessert by Casa Verde is a place for those looking for something sweet and new in the food mecca that is Cebu. In here, as the adage goes, “there’s always room for dessert.”
