Filipino cuisine among Top 12 food trends for 2015

MANILA – A food trend watcher is expecting Filipino cuisine to appear prominently in restaurants, kitchens and supermarket shelves in the United States next year.

Kara Nielsen, culinary director of the advertising agency Sterling Rice Group, recently listed Top 12 food trends for 2015, with Filipino cuisine ranking eighth.

Nielsen noted that people “will see us all gain a newfound appreciation for Filipino food,” according to an article published in Fine Dining Lovers.

Topping Nielsen’s list of food trends for 2015 is fresh bone broth, followed by the ancient brew Gruit Ales, Japanese matcha tea, coconut sugar, fermented food, marijuana edibles and pistachios.

At ninth place is any dish with smoky flavors followed by grains, kalettes – a hybrid between Brussel sprouts and kale – and the concept of same-day food delivery.

Chef, TV personality and food writer Andrew Zimmern earlier included Filipino cuisine in his list of Top 10 food trends for 2013 in the US.

Early this year, two US websites shone a spotlight on Filipino food, while the influential restaurant guide Zagat noted that the cuisine of the Philippines has “become increasingly celebrated around the United States.”
