MANILA — While Somerset Alabang Manila boasts of homey touches in its spacious units, its main F&B outlet Cafe Madrigal and Bar takes pride in incorporating new styles to traditional comfort food.
The 100-seat restaurant is being handled by Enderun Hospitality Management, which was set up by Enderun Colleges to manage, offer consultancy services and handle F&B operations for different properties and hotels.
Cafe Madrigal is only the second hotel restaurant of Enderun after Silver Tie Cafe and Bistro at the Microtel Acropolis in Libis, Quezon City.
“The concept that they were going for is an all-day dining experience since this is the only outlet of the property. We have to incorporate as much as we could,” explained Philip Brodett, F&B manager for Cafe Madrigal, citing dishes like steaks, salmon and other comfort food staples.
But while the menu features many familiar dishes, don’t expect the traditional. Brodett calls Enderun's cuisine “contemporary progressive,” which introduces new ingredients and styles to the classics. Sometimes, the tweak is minor like using spinach for the sinigang but the Caesar salad, for instance, was totally deconstructed. While it uses the same ingredients, the salad was plated in a different way.
“That’s also what we try to incorporate with the food because our home base is Restaurant 101 in Enderun Colleges. This is actually where we try all of the recipes,” explained Brodett. “We try to spice things up a bit.”
Here are some dishes you can try at Cafe Madrigal.
On December 31, Cafe Madrigal will offer a dinner buffet at P 1,650 per person from 6-10 p.m.; and Countdown Cocktails at P888 per person from 11 p.m. to 1 a.m. Brunch and dinner buffets will also be available on January 1.
