MANILA -- The Makati Shangri-La, Manila hotel celebrates World Food Day this year by introducing new salad creations by Italian chef Nicola Conti.
Celebrated every October 16, World Food Day aims to raise awareness behind poverty and global hunger issues.
With the theme “Growing Together,” the hotel is focusing on using ethically sourced ingredients for its F&B requirements. The hotel has partnered with local farms, such as Gourmet Farms, in sourcing high-quality produce.
Year to date, the hotel has already increased its demand for locally sourced produce by 15 percent and is expecting to further increase this percentage in the succeeding years.
Chef Canuti’s salads for World Food Day, which are available at the Circles Café salad station until October 21 only, are visually vibrant. He tastefully tempers his dressings so that the vegetables' flavors shine through.
Here's what to expect.
The Red Cabbage salad is an explosion of reds and oranges, and has a nice crunch due to the freshness of cabbage, beet roots, onions, and cranberries. Photo by Photo by author
The Broccoli and Pumpkin Salad has very slightly blanched broccoli and lightly roasted pumpkin, which go very well with the honey vinaigrette. The sweetness adds a nice refreshing note to the two vegetables. Photo by author
For the Grilled Vegetable with Parsley Pesto, Canuti lightly grills the zucchini, eggplants, and peppers and tosses them in parsley pesto Genovese and pine nuts for a savory salad. Photo by author
It’s interesting how Canuti made a green salad without lettuce. For the Lentil, Avocado, and Kale Salad, he instead uses lentil beans and kale with mashed avocado to provide additional flavor. Photo by author
