MANILA -- Edge, the 16th floor terrace bar of Discovery Primea, has partnered with DrinkManila to celebrate International Woman’s Month with a special "Women and Tipple" series.
For three Wednesdays this month (until March 21), the newly opened hotel bar which offers a panoramic view of the Makati skyline will host invite-only tastings of spirits and cocktails created by DrinkManila’s marketing director and mixology expert Icy Marinas.
Tatum Ancheta, one of the founders of DrinkManila, hosted the first event featuring Don Papa Rum last March 7.
In line with the feminist theme, Ancheta led a discussion on the misconceptions about women who drink -- like the common notion that women who drink are “wild” and don’t think highly of themselves, and therefore are asking to be disrespected.
On the other end of that spectrum, there’s also the stereotype that women only enjoy sweet and colorful cocktails, and that women can’t appreciate stronger spirits like whisky or rum.
This was obviously debunked during the first session, as the featured spirit that night, was Don Papa Rum, a premium aged, small-batch, single-island rum made in the foothills of Mt. Kanlaon in the island of Negros.
Along with the Don Papa 7 and the Don Papa 10, the brand also presented its latest release, the Rare Cask. Only 250 bottles was made available in the Philippines when this was released last year. Using STR barrels (overburned barrels), and with a whopping 50.5% ABV, this dark spirit tastes strongly of dried fruit, although it’s less sweeter than the 7 and the 10. It also has chocolate and cocoa notes, especially in the finish. Smoke, too, is more prevalent in this rum, making it something that perhaps whisky drinkers might enjoy.
After the tasting, Marinas showcased Don Papa Rum cocktails, as the ladies enjoyed the Edge’s signature bar chows like tangy shrimp ceviche, sweet and creamy foie gras macaroons, crispy warm salmon nigiri, tender Wagyu beef skewers, and Mini Airbags filled with queso de bola mouse.
1. Pretty in Peach
Inspired by the popular '80s movie "Pretty in Pink," this cocktail takes all the good things in a gin and tonic -- clean and herbal notes -- and makes it with Don Papa rum. Together with the rum, peach syrup provides a sweet counterpoint to the acidity of the passionfruit liqueur, and some spicy bitterness from cardamom bitters.
It’s not often that we come across banana-flavored drinks. This one is a summery tiki drink which unabashedly tastes of banana and lemon. Strange at first sip, but it grows on you.
3. Dona Mamas
A variation of the Old Fashioned, this one takes the classic cocktail and makes it sweeter by using Don Papa Rum, and adding chocolate cookie syrup, and chocolate and angostura bitters. There’s also the garnish of a lemon cookie that complements a sip of cocktail.
On March 14, invited gin lovers are in for a treat with the Botanist at the Gilarmi Lounge, while on March 21, various spirits from Destileria Limtuaco (Mango Rum Liqueur, Manille Liqueur de Dalandan, among others) will be presented at Edge.
