MANILA -- The Makati Central Business District welcomes another place for a coffee fix as illy Caffe opens its new branch in Paseo Center in Salcedo Village.
Coffee lovers in the area should be familiar with this corner of Paseo Center as it had been home to similar coffee shops in the past. Illy opted to open up the space with floor0to-ceiling windows letting natural light illuminate the café during the day. One can’t ignore the center chandelier made up of illy special edition espresso cups which serves as the centerpiece of space.
At the cafe's recent formal opening, master barista and trainer Fabrizio Aque educated guests and curious onlookers how Italians enjoy their coffee.
Aque is a graduate of illy's own Università del Caffè (University of Coffee) and is responsible of training baristas in eight of these centers within Asia Pacific.
From differentiating “latte” (milk) and “caffe latte” (coffee with milk), telling people to order a machelado (coffee with chocolate, what is commonly called a mocha) instead of a mokka (stovetop espresso maker), and demonstrating the proper way to foam milk, Aque gamely showed off his knowledge of coffee and his barista skills.
Also present were Andrew Nathan, general manager of illy for Asia-Pacific, and Italian Ambassador to the Philippines, Giorgio Guglielmino, who led the ribbon-cutting ceremonies.
The café served some of the favorites in the menu like the Arroncini with Tomato Sauce, and Panino Pollo Con Avocado as Aque talked about illy’s cold brew coffee.
Cold brewing removes the acidity typical of coffee making it a much smoother café fix.
Aque also whipped up an Espresso Mojito and a Vodka Espresso, alchoholic coffee concoctions, which will soon be available at the illy Caffe Paseo branch.
IIly Caffe at Paseo Center is open from 7 a.m. to 10 p.m. from Monday to Friday and from 7 a.m. to 7 p.m. on Saturday. It is closed on Sundays.
