Atchara sandwich, anyone? Pinoy wins in Amsterdam for unique dish

AMSTERDAM – The ‘Atchara Sandwich’ created by Pinoy cook Reynorr Samson won fourth place in the recently concluded Lekkerste Broodje (The Tastiest Sandwich) Horeca 2018.

Samson bested 16 others from known hotels and restaurants in the country. The contest was part of the HORECAVA Amsterdam, the biggest convention fair for the food and beverage and hospitality industry in the Netherlands.

Atchara sandwich is made of fried beef tapa (tenderloin), garnished with mushrooms and homemade atchara (pickled papaya) and banana catsup.

Samson shared that he was initially advised by his chef to come up with something that can be traced back from his roots and so he thought of using beef tapa from the famous Tapsilog, which is in fact one of his favorites. He would also like to pay tribute to his mother who usually makes homemade atchara (pickled papaya). The banana catsup is made from his own recipe.

The 32-year old Samson has been working as an independent cook for six years now in Sheraton Hotel in Amsterdam. He admitted that being in the contest is such a great opportunity for him, what more receiving an award.

“The contest is important because this is a big challenge for me. I want to prove something,” he said.

He said that the support given by his chef made him even more confident. “He gives me advice and pushes me to give my best,” he added.

Chef Melvin Salimin, on the other hand, feels proud and has nothing but praises for the Pinoy cook. “He works hard. He’s been working for six years and he does his job very well. And I am very proud to work with him,” he said.

Salimin knows for certain that Samson will go a long way and will definitely succeed in his endeavors. “I know he’s gonna be a good chef someday. He is now working hard to get there,” he stated.

He said he has so much faith in Samson and his capabilities so he gives him the freedom to do certain tasks such as managing his own team, setting up new menus and do some orderings.
