MANILA -- Manila’s culinary scene is fast catching up with the latest global food trends with the rise of Third Wave coffee shops, restaurants serving organic food, and gastropubs, where the idea is to elevate the usual pub grub to gourmet level.
The latest gastropub in town is Wolf and Fox at the Bonifacio Global City, which introduces a fun twist to the concept as it classifies customers as either “wolves,” known to be said to be an aggressive hunters, or “foxes,” which are more creative. It has two menus tailored to these two types of people, and while brief (only two pages), it explores what a European gastropub has to offer.

Appetizers are hearty in both sides of the menu. From the Wolf menu, the British Classic Pub-Style Nachos (P388) arrives at the table in a big plate heaped with corn chips, black olives, ground beef, baked beans, jalapeno, fresh salsa, mushrooms, charred corn, sour cream and a cheese sauce that leans toward the sweet side.

The Fox menu, meanwhile, offers the Deconstructed Ceasar Salad (P308), with the components served on a board. While it was great to be able to individually taste the ingredients, especially the slices of bacon, the salad is still at its best when tossed uniformly. But in my opinion, this was a challenge to eat.

But if you’re not into deconstructed appetizers, the restaurant has a French Onion Soup (P228) and Grilled Pacific Oysters (P238) from the Wolf menu; or the classic pub staples A Pound of Wings (429) or Beer Brined Mussels (P368), which comes with rustic bread to mop up the beer-mussel wine sauce.
The mains on the Wolf menu represent the carnivorous side of the animal with dishes such as a giant dry-aged 600-gram US Angus rib-eye (P1,789), or the ever trendy Buttermilk Fried Chicken (P378).

Wolf Burgers are also on offer with choices for buns (sesame seed or brioche), sides (homemade potato chips, skin-on fries, or upgrade to truffle fries for P78), US Angus beef patty (P328), with all the trimmings, and optional add-ons.
The eponymous Wolf and Fox Double Deck (P449) is a monster of a burger with double patties, cheese, mushrooms, and bacon.
For those looking to share, the Four Mini Brioche Buns (P319) are ideal with tender brioche, juicy slider size patties with mushrooms, and dripping with cheese and dressing.

The Fox menu’s mains veer more toward traditional pub staples like fish and chips (P358), which has nicely cooked fish, a salty crust, that goes well with the traditional accompaniments of malt vinegar, lemon and tartar sauce.

There’s also a half-chicken serving of non-traditional Coq Au Vin (P378) and Burgers and Mash (P348), as well as farmhouse sandwiches like the Metro Reuben (P438), among others.

Desserts in both menus have interesting choices ranging from English Toffee Pudding (P208), Deconstructed Cream Pie (P198) or cupcakes (P78). Try the Eton’s Mess (P268), a traditional English dessert is a cupful of whipped cream, with pieces of meringue for crunch and a healthy helping of fresh tart strawberries with a little syrup.
In typical “pub” fashion, one should accompany your food with drinks. Wolf and Fox has a drink list of domestic and international beers, fruit shakes, liquor and interesting cocktails.

The Safari Sangria (P368) has a really nice fruity sweet taste to it without overpowering the wine. Other cocktails to try include the cleverly named Absolut Stress (P308) or the whimsical Banana Popsicle Martini (P298), among others.
