6 dishes to try at Hungry Hound

MANILA – Young chef Mikko Reyes gives his spin on pub food favorites as he joins the team of The Hungry Hound at the Globe Tower of Bonifacio Global City.

The restaurant, known for its hip and casual vibe, complements the cocktail bar Niner Ichi Nana next door, which is separated only by curtains. Both concepts are co-owned by restaurateur and food writer Erwan Heussaff.

The Hungry Hound’s menu is pretty straightforward, with each dish drawing attention to its flavor profile. According to Reyes, the idea is to incorporate Asian influences into typical Western fare for that added kick.

Or it could be as simple as playing with different ingredients, regardless of where they came from, he added.

In a food tasting event recently held for members of the media, Reyes showcased a mix of bestsellers and new items on The Hungry Hound’s menu.

Here are the six dishes that made the cut.

Duck Fat Fries (P288)

Do not expect to taste a strong duck flavor in this dish, which is nevertheless sinful and addictive. The duck fat, with its high smoke point, gives the fries an unmatched crispy exterior and a moist, fluffy center. You will always find your hand reaching out for those fries seasoned with smoked sweet paprika, garlic confit and rosemary – and end up regretting it later if you are on a diet.

Old Bay Crab Croquetas (P297)

This appetizer is light yet flavorful, and is a great way to prepare your stomach for the heavier main course. The crispy crust effectively coats the soft ball of crab meat inside, with the dish complemented by the dill caper aioli and charred corn relish.

Chili Whipped Lardo and Pate Toast (P179)

Just like the croquetas, this appetizer packs a lot of flavor without being overpowering. Top it with the apple chutney and the garlic confit that comes with it for an added layer of texture and sweetness. The next thing you know, you are already out of toast.

An affordable alternative to the pricey 1-kilo Shortloin Steak (P3,568), the Hanger Steak does not scrimp on indulgence with its juicy meat and foie gras butter sauce. The dish comes with a generous serving of fries, perfect for wiping the leftover sauce off your plate.

The aglio olio spaghetti is a great canvas that lets the flavors of the French duck breast shine, and is a welcome break from heavy dishes such as steak, sandwiches and other cream-based dishes. It is simple and unpretentious, yet very satisfying.

Banoffee Trifle

A new item on the menu, the Banoffee Trifle is like comfort packed in a glass with rum-stewed banana layered with salted cashew brittle, toffee cream and spiced banana cake. If you like bananas, this will be finished within minutes.
