Restaurant offers heirloom recipes for mom, cigars and whisky for dad

MANILA, Philippines -- Spiral Restaurant at Sofitel Philippine Plaza Manila has special treats in store for Mother’s Day on Sunday, May 12, and Father’s Day this coming June 16.

Spiral’s team of master chefs will pay tribute to all mothers on Mother’s Day by sharing their own mom-inspired recipes from all over the world.

Spiral executive chef Eric Costille will make a rabbit cocotte with rosemary and olives together with a gratinated polenta. Costille, whose family migrated from Italy to France in the early 1900s, related that while his mom Claudine was born in France, the food they ate was Italian. His mom cooked the rabbit cocotte on Sundays.

Chef de cuisine Cecile Degenne, meanwhile, will present her interpretation of paella (see top photo).

“We lived in France near the Spanish border, and we spent our summers there," she recounted. “My mom taught me how make paella. We’d make it in the outdoor kitchen in the summer.”

Executive chef Mok Chee Wah’s dish for Mother’s Day is a slow-cooked chicken with herbs wrapped in lotus leaf – a healthy dish that’s of the family tradition, and something that Mok, who hails from Guangdong, today prepares for his children.

Filipino chef de partie Jojo Babierra will serve a special goat caldereta as a tribute to his own mother, who ran a small Filipino restaurant in his hometown of Lucban.

Master chocolatier chef Tweet Obsequio’s offering is an original concoction: jasmine tea-infused dark chocolate pralines that honor her Filipino-Chinese mother, who said that drinking jasmine tea – a good anti-oxidant that aids slimming and reduces cholesterol -- was part of Chinese women’s regular beauty regimen.

Chef Halim Ali Khan from India will prepare his childhood favorite, egg biryani, while Japanese Chef Hiroaki Yamaguchi – who is fluent in Filipino – will make nikujaga, beef stewed in dashi, ginger, sake, and sesame oil, garnished with onions and potatoes.

The special Mother’s Day brunch will also showcase brand new summer fashion collections from Pia Gladys Perey, who recently did her first show at Style Fashion Week in Los Angeles; and professional race car driver Mark Bumgarner, who is also making his foray into fashion.

Perey’s style for this collection is hallmarked by Grecian draping and romantic glamour. Key items from her collection will be worn by celebrity moms and daughters including Rhian Ramos and her mother, Lay, Tacloban councilor Cristina Gonzalez-Romualdez, actress Giselle Toengi-Walters and daughter Sakura, model and journalist Georgia Schulze del Rosario and her daughters, beauty queen Patty Betita and son Emilio Ejercito, and Patricia Hizon.

Bumgarner found his way into fashion after styling for a Philippine denim brand’s fashion and presenting three capsule collection shows. His sporty summer collection is for fearless and elegant women, in flowy fabrics of gold, silver, white and black.

For dad

Meanwhile, on Father’s Day , Spiral partners with Tabacalera to offer a selection of premium handcrafted cigars.

Master torsadoras who have perfected the art of hand-rolled cigars will demonstrate the three-step process. Master rollers can roll up to 250 to 300 cigars a day, and “they will know if one of our cigars is off by weight by even .1 or .2 grams,” said Jose Perfecto, who handles Tabacalera domestic and corporate sales.

Sofitel will also make Johnny Walker Black, Blue, and Gold scotch whisky available to all Fathers as a perfect cap to Father’s Day brunch.

A raffle will be held on both occasions. Mothers get the chance to win gift items from Lancome, Shu Uemura, Kiehl’s, Swarovski Perfume, CMG, Maidenform and Tefal.

Fathers get the chance to win a “first class ticket to luxury” -- a 15 to 20 minute test-drive on a Maserati GranTurismo Sport 4.7L ‘Blu Sofisticato’ model around the Mall of Asia and Sofitel area.

The Mother’s Day and Father’s Day brunch celebrations will run from noon to 3:00p.m. and will cost P3,250++ for adults, P1,600++ for children between 5-11; for kids 4 or below, it’s free of charge.
