New eats: Singapore hawker center opens in Megamall

MANILA -- Makansutra Hawkers opened in SM Megamall last week to give Filipinos a taste of authentic Singapore food. 

A culinary collaboration between acclaimed Singaporean culinary celebrity KF Seetoh, and Filipino partners led by JJ Yulo and chef Him Uy De Baron, everything in this 500-seat space screams “die, die must try” -- the highest rating given to a hawker stall in Singapore -- from the corrugated plastic and metal “roof” and colorful stall fronts, to the cacophony of culinary cookware of mingling with the aroma of Asian favorites entrancing customers to the counters. 

This is the most authentic hawker experience diners can have short of buying a ticket to Singapore.

In opening Makansutra Hawkers, Seetoh said they would like to inspire “one dish entrepreneurs,” especially among those who do not have much capital. Most of the stalls are owned by second-generation hawker owners intent on preserving the hawker tradition and recipes. They themselves flew in to train the Filipino cooks.

Seetoh also stressed that the food in Makansutra Hawkers is not Singaporean but rather it is Singapore-inherited food using the best Indian, Chinese and Malaysian hawker traditions and recipes.

Diners are encouraged to come to Makansutra Hawkers with a sense of adventure and an open mind as there is no adjustment for local taste buds and only original recipes will be used.

However, the partners were pleasantly surprised that they were able to source 99.5% of the ingredients locally, which helped make the prices more manageable and affordable.
