Food shorts: French food shop, dim sum, 4th of July buffet

1. Pinoy bartender competes in Germany 

Pinoy bartender Orman Bag-ao represented the country at the Bacardi Legacy Cocktail Competition held last May 18 to 24 in Berlin, Germany. 

With him was his signature Rain or Shine drink, which was pitted against mixes from 37 other countries. 

Its ingredients include Bacardi Carta Blanca light rum, freshly extracted carrot juice, guava juice, mint syrup, freshly squeezed lime juice, and grapefruit bitters.

Although he did not win in the competition, the bartender was able to showcase Pinoy talent and immortalize his name. 

"My journey in the Global Barcardi Legacy Cocktail Competition has made me a better bartender than yesterday. I have learned to continue the battle, win or lose, rain or shine," he said. 

2. Navotas honors Mama Sita

Culinary luminary Teresita R. Reyes, popularly known as "Mama Sita," is the founder of Marigold Manufacturing Corporation. Earlier this month, she was honored by her home city, Navotas. 

Mama Sita's daughter, Clara Reyes-Lapus, received a plaque of appreciation from the local government. This after the family donated a framed Mama Sita collection of commemorative stamps (series of 2013-2015), as well as two sets of cookbooks. She also did the same to the Cebu City Public Library. 

A cooking demonstration was held at the Navotas City Hall lobby after the awarding.

3. French food shop opens at Festival Mall

A French food shop has opened at the River Park dining clusters at Festival Mall in Alabang, Muntinlupa City.

L'Épicerie Gourmande has different jams, chocolates, wines, cheeses, and sausages, among others. All these are imported from Europe.

Apart from selling various food products and ingredients, L'Épicerie Gourmande also turns into a French café or bistro. They serve macarons, pain au chocolat, and croissants, as well as cold cuts and cheese platters. 

4. New dishes at Watami 

Watami Japanese Casual Dining Restaurant and Watami Grill & Sushi Bar are launching all-new dishes and 12 different kinds of sake. 

The new dishes include Assorted Sashimi Salad, Angel Roll, Salmon Belly Skewer, Beef Wagyu Skewer, Tamagoyaki, Homemade Rolled Omelette with Mentai and Cheese, Special Curry Udon with Cutlet on Stone Pot, Beef Sukiyaki, and Skewer Rice Box. 

The new sake flavors, meanwhile, can go well with sushi, sashimi, and skewers.

Watami Japanese Casual Restaurant is located at Shangri-La mall and SM Mall of Asia, while Watami Grill & Sushi Bar has branches at Greenbelt 2 and Uptown Mall BGC.

5. 53% discount at Dusit Thani Manila's The Pantry

Crunchy Corn Fritters (243 kcal)

INGREDIENTS

- 3 cups fresh corn
- 2/3 cup cornmeal
- 1/4 cup shredded cheddar cheese
- 1/4 cup cream cheese
- 2 green onions, sliced
- 2 slices cooked bacon, chopped
- 2 large eggs, lightly beaten
- Juice of 1 lime, divided
- Kosher salt
- Freshly ground black pepper
- 2 tbsps. extra-virgin olive oil
- Sour cream, for serving
- 1 Sachet of Easy Pha-max Wheatgrass Pure

DIRECTIONS: 

- In a medium bowl, combine corn, cornmeal, cheddar, cream cheese, green onions, bacon, eggs, and half the lime juice. Stir to combine and season with salt and pepper. Using your hands, form the mixture into small patties.

- Heat olive oil in a large skillet over medium heat. Working in batches, fry the patties until they’re golden brown, 3 to 4 minutes per side.

- Garnish each with sour cream and a squeeze of lime if desired.

7. Poke Poke opens 3rd branch in Greenhills 

This Hawaiian/Asian fusion restaurant is opening its third branch at 8 Missouri Street, Northeast Greenhills in San Juan City. 

Poke Poke serves the well-loved Hawaiian delicacy Poke, which is made from marinated cuts of fresh seafood. They have an unlimited selection of fish, meats, and sauces. 

Poke Poke also has branches at Estancia Mall in Pasig City and SM Aura in Bonifacio Global City. 

8. Savory dim sum at Marco Polo Ortigas Manila's Lung Hin

Known for their delicious take on Cantonese cuisine, Marco Polo Ortigas Manila's Lung Hin showcases a variety of authentic steamed, pan-fried, and deep-fried dishes.

Enjoy steamed dumplings with fillings such as scallop, spinach and shrimp. Filipino-favorites chicken feet with XO Sauce, barbecue pork bun (or sio pao), and cordyceps flower siomai are also in the menu.

10. Johnny's Steak and Grill turns one 

Johnny's Steak and Grill, located at B Hotel in Quezon City, is celebrating its first anniversary from June 27 to July 2.

13. World Barista Champion visits Manila

World Barista Champion 2014 Hidenori Izaki recently paid a visit to Manila to judge the Latte Art Throwdown held at the Coffee Project in Macapagal Blvd, Pasay City. 

At the Latte Art Throwdown, baristas from different parts of the country showcased their creativity and passion for coffee. The event was sponsored by Allegro Beverage, Victoria Arduino espresso machines, Jolly Cow Fresh Milk, Lotus Biscoff, and Coffee Project.

14. 9 Steps to Belgian Beer Bliss by Stella Artois

Last June 22, Stella Artois hosted its 2nd Draught Masters Philippines Competition at Fairmont Hotel in Makati City.

This gave bartenders from various restaurants, bars, and hotels an opportunity to showcase their expertise in the nine-step pouring ritual.

Here are the steps: 

Step 1: Purification

The ritual begins with the bartender giving the signature Stella Artois chalice a cold-water bath, letting it reach the same temperature as the beer. 

Step 2: The Sacrifice

In a single swift motion, the tap is opened but the first drops of beer are drained away—a sacrifice to guarantee that each drop poured into the chalice delivers the freshest taste.

Step 3: The Liquid Alchemy

The chalice is held at a 45-degree angle to ensure that the beer circulates as it enters the glass, resulting in the perfect combination of liquid and foam.

Step 4: The Crown

As the beer pours, the chalice is gracefully straightened and lowered to form a perfect foam, which seals the beer’s freshness by preventing the exposure of liquid to air.

Step 5: The Removal

Here, a smooth and fluid exit is guaranteed by closing the tap quickly and removing the chalice to avoid any last drops from entering.

Step 6: The Beheading

The head is trimmed using a foam cutter at a 45-degree angle. This ensures that your glass of Stella Artois is void of large, loose bubbles that can speed up the dissipation of the foam.

Step 7: The Judgment

The final head serves as a protection that keeps the freshness the beer. Its thickness must be three centimeters (two fingers) to ensure that the flavors are locked in.

Step 8: The Cleansing

The chalice is dipped in cold water to rinse the outside. The result is a neat, brilliant-looking chalice that is pleasant to hold.

Step 9: The Bestowal

For full appreciation, the chalice is placed on a coaster with a drip catcher at the base. This caps off the ritual with a perfectly served glass of Stella Artois for a Belgian beer bliss.

15. 4th of July at Crimson Hotel Filinvest City
